The following is a Q&A conducted by the Lincoln Road BID with Edoardo Paredi, Owner and Director of Operations of IT Italian Trattoria.

What factors influenced your decision to open your business on Lincoln Road?
I immigrated to the United States 13 years ago and have always loved Miami Beach. Since I arrived, I dreamt of channeling my entrepreneurial spirit and opening a venture of my own in the city. In 2020, my partner and I opened the first IT Italian Trattoria in the U.S. on Collins Avenue and followed that up with another in New York City near Times Square. We were looking for a third location and were impressed with Lincoln Road. In fact, our office is just steps from the Road. We noticed that the destination has continued to grow and evolve, and it was a natural next step for us following the success of our first two locations. We knew the “third time would be a charm.”
How did the accessibility, such as distance to Lincoln Road from other prominent neighborhoods, impact your choice of location?
It’s vital for a fast casual restaurant to have significant pedestrian traffic. We knew that from our success on Collins Avenue and Times Square. So, we chose a location on Lincoln Road near big-name stores such as Nike, Apple and Gap. Our restaurant stands out with its mid-range pricing and diverse menu offerings, catering to a broad demographic that includes families, tourists, and residents. Located in an area that attracts a wide range of customers, we are well-positioned to thrive in this competitive market.
What are your predictions for the future of Miami Beach as a whole?
As a world-class destination, Miami Beach will continue to thrive and grow, attracting both international and domestic visitors. I’m excited about the incredible projects being developed in Miami Beach, particularly around Lincoln Road. This iconic cultural district encapsulates a rich history and an innovative spirit.
I have no doubt that Miami Beach will become even more engaging, drawing locals to work, shop, dine, and enjoy events throughout the city. New developments will significantly enhance Miami Beach’s reputation as a premier destination and drive economic growth for Lincoln Road and the entire city.
